Check out this attractive mix of highly nutritious baby leaf kale varieties. The blend includes Dwarf Blue Kale, Scarlet Kale, Red Kale, and Cavolo Nero Kale. These baby leaves are tender and flavorful. Of course, baby kale leaves are fabulous eaten raw, and they are an excellent addition to salad mixes. But they hold their texture well when cooked and can be steamed, stir fried, and roasted.
Fresh from the garden, kale, a cruciferous vegetable, and member of the Brassica family, is a nutrition superstar. It not only has 6 times more calcium than broccoli but also contains generous amounts of potassium, copper, and manganese as well as vitamins A, K, and B6.
A cold-tolerant, frost-resistant crop, kale has a long season and can be planted in early spring or late summer. But late season planting may be preferrable because the sweet, nutty flavor is more pronounced in cool weather. Succession planting, sowing a new row every two to three weeks, ensures a long harvest time.
Consider growing with companion plants nasturtium and mint as sacrificial crops. Nasturtium lures cabbage white butterflies to lay their eggs, keeping caterpillars away from kale; and mint deters flea beetles. But mint should be grown in containers since it grows aggressively and can take over a garden.
